RANCHO MIRAGE, California -- Rose water is an integral part of Persian desserts and baked goods. True to its name, rose water (or Golabis a water that is infused with the essence of petals from rose flowers. It is a unique and wonderful ingredient that adds an unmistakable accent to the dish.

According to the National Medicinal Plants Project of the Agriculture Ministry, Iran supplies 90% of the rose water used throughout the world, most notably the city of Ghamsar, in the Kashan province. Lebanon, Morocco and Bulgaria are also producers of rose water.

Rose water is created by steeping flower petals in water, using special copper pots. These pots are placed atop ovens composed of brick and stone for several hours. To celebrate rose water, an festival is held each spring. This is known as Golabgiri, which translates to Rose Water Making. The festival takes place in central Iran, in and around Kashan. It is an annual commemoration of the ancient traditions passed down from generation to generation, as well as a celebration in honor of the rich culture behind it.
